Abstract

The Beta vulgaris L. (beet) is a well-adapted vegetable that is easily accessible all over the world. Phytochemical analysis demonstrated that B. vulgaris is rich in various biologically active compounds such as flavonoids, alkaloids, terpenoids, steroids, tannins, saponins, reducing sugars, and cyanogenetic glycosides. Beetroot is also one of the few plants that contain a class of extremely bioactive pigments known as betalains. Research has been published on the biosynthesis pathway, biological activities, and bioavailability of betalains. In this context, B. vulgaris has various health benefits such as anticancer, antioxidant, and antiinflammatory activities, along with improvement of cardiovascular health with reduction of blood pressure. In this chapter the biological and pharmacological activities of beetroot are investigated according to previous experiments. © 2019 Elsevier Inc. All rights reserved.
