Abstract

The safety of food products is an important concern for people worldwide, especially at the consumer level. Product safety could be achieved by incorporating functional components like metal–organic frameworks (MOFs) into food packaging materials. Recently, MOFs, a class of functional materials, are uniquely suited to food safety because of their high surface area and porous structure. MOFs play a pivotal role in food packaging due to their remarkable biocompatibility, antibacterial, antioxidant properties, encapsulation capabilities, and non-reactive nature when in contact with the packaged product. MOFs also possess the unique capability of undergoing colorimetric changes in response to environmental cues, adding an innovative dimension to food packaging and providing consumers with a visual indicator of product freshness and integrity. This comprehensive review delves into the utilization of MOFs in food packaging, explores various methods for their synthesis, examines their toxicity profile, and presents potential applications in food packaging while also considering future prospects in this field. © The Author(s), under exclusive licence to Springer Science+Business Media, LLC, part of Springer Nature 2025.
