Abstract

Quinonoids (quinones) represent a major group of organic compounds with great health importance and are widely distributed. Quinones have been found in different tissues which have significant biological activities and are present in natural and synthetic sources. As active ingredients, quinones have been prescribed as purgatives or drugs which have antibiotic, antitumor, antimalarial, antineoplastic, anticoagulant, and herbicidal properties. In this chapter, we discuss the phytochemistry, biological activities, current and possible industrial applications, possible interaction with drugs/foods and food supplements, techniques of purification, extraction, identification, and quantification of quinones along with possible effect of food processing role on quinones. © 2020 Elsevier Inc.
