Abstract

The modern packaging industry has been moving toward the development of packaging systems with enhanced functionality. Active and intelligent packaging are two important innovative aspects of modern packaging, the ultimate aim of which is to improve consumer safety. Intelligent packaging refers to the fabrication of smart labels for real-time monitoring of the status of perishable products during the entire supply chain. Nanomaterials of various kinds exhibit a huge potential for use in intelligent packaging. Nanosensors provide sensitive and selective platforms for sensing of deteriorative markers. In general, this chapter covers the recent research progress in nanosensors for quality monitoring of food products. Most of the examples introduced in this chapter represent nanosensors that are easily transformed into films and embedded into flexible packages. Although the promise of using nanomaterials in sensing technology is well understood, the long-term health hazards and unforeseen risks need to be carefully studied. © 2021 Elsevier Inc.
