Abstract

The majority of spoilage is attributed to aflatoxin-producing Aspergillus species, such as A. flavus, A. parasiticus, and Penicillium puberculum. Among these, Aflatoxin B1 (AFB1) poses a significant threat due to its carcinogenic potential. Lactic Acid Bacteria (LAB), encompassing genera such as Lactobacillus, Leuconostoc, Pedicoccus, and Streptococcus, offer a promising alternative for aflatoxin removal. Effective binding of aflatoxins to the cell walls of LAB facilitates their removal. This study reviewed the current understanding of the mechanisms underlying LAB function in aflatoxin absorption and elimination from dairy products and aimed to develope of efficient strategies for aflatoxin removal.
